EATING SEASONAL FOODS: Fall is all about SQUASH

Did you know Squash is a SUPERFOOD? Loaded with vitamins and minerals, antioxidants, gorgeous colors and low in calories.

There are 16 different kinds of squash.  Here are a few:

Sugar Pumpkin:  Vitamin K, C, Potassium, Iron and fiber

Butternut Squash: Vitamin C, Magnesium and Potassium, and 87% water

Zucchini: only 3 grams of carbs, less than 1 gram of fat and loaded with Vitamin A, C and magnesium and antioxidants!

Kabocha Squash:  This deep orange color signals a high content of beta-carotene, which is a nutrient with antioxidant and anti inflammatory properties.
