Holiday Green Bean Salad
Festive colors of mixed radicchio goat cheese & green beans with honey mustard dressing
Fresh salad alternative to the traditional green bean casserole
Super simple and easy to make the day before or morning of any holiday celebration!
The perfect snappy & yummy dish to bring to any holiday party - it travels so well!
My favorite part is the peppery mustard - makes this salad irresistible!
Ingredients
1 pound green beans, trimmed
½ head radicchio, sliced into strips
¼ cup thinly sliced red onion
2 ounces goat cheese
2 tablespoons chopped walnuts
2 tablespoons sliced almonds
¼ cup tarragon
Flaky sea salt
Steps
Bring a large pot of salted water to a boil and set a bowl of ice water nearby. Drop the green beans into the boiling water and blanch for 2 minutes
Remove the beans and immediately immerse in the ice water long enough to cool completely, about 15 seconds. Drain and place on paper towels to dry
Transfer the beans to a bowl and toss with the radicchio, onion, and a few spoonfuls of the dressing
Arrange on a platter and top with small dollops of goat cheese, the walnuts, almonds, and tarragon. Drizzle with more dressing, season to taste with flaky salt, and serve
Honey Mustard Dressing Light, sweet and tangy
Whisk all ingredients in a bowl
Drizzle over green beans and lightly toss
2 tablespoons Dijon mustard
2 tablespoons extra-virgin olive oil
2 tablespoons apple cider vinegar or fresh lemon juice
1 tablespoon honey
1 small garlic clove, grated or minced
¼ teaspoon sea salt and pepper
